Ingredients:
- 1 and a 1/2 cups uncooked basmati rice
- 3 tablespoons vegetable oil
- 1 and a 1/2 teaspoon cumin(zeera) seeds
- 2 inch long cinnamon stick
- 6 whole cloves
- 1 and a 1/2 teaspoon salt
Method:
- Wash the rice in 3 changes of cold water, then soak for 15-20 minutes in fresh cold water.
- Heat the oil in a saucepan. Add the cumin seeds, cinnamon and cloves when oil is hot and cook for five minutes.
- Then add the rice, salt and 2 and a 1/2 cups of water.
- Cover and bring to a boil. Stir once and and turn heat down to low and simmer gently, covered for 10 to 1 5 minutes, or until all water is absorbed.
- Serve with lentils or curries. Raita goes well with rice.
